Licensing of the Crossed Grain Gluten-Free Symbol

The internationally recognized symbol for gluten-free foods is the crossed-out ear of wheat. Its use is voluntary, but on a protected basis.

Since 1991, the DZG (German Celiac Society) has registered the Gluten-Free Symbol as a trademark in Germany and has been granting it under a licensing agreement to national manufacturers and distributors of gluten-free foods in Germany since 1999.

Before the symbol can be used, current proof via gluten analysis is required. According to EU Regulation 41/2009, a food can be labeled as gluten-free when sold to the end consumer if a gluten content of no more than 20 mg/kg (20 ppm) is not exceeded.

The symbol cannot be used for unprocessed products such as milk, eggs, fruit, vegetables, raw meat, and fish.
