Microbiological Complaints in Food 2017
In 2017, the Chemical and Veterinary Investigation Offices (CVUA) of Stuttgart, Karlsruhe, Freiburg, and Sigmaringen examined a total of 13,045 food samples (8,906 routine samples and 4,139 event-driven samples) for microbiological parameters.
Of these, 994 routine samples (11.2%) and 767 event-driven samples (18.5%) had to be objected to - in 600 samples deficiencies were also noted. Thirty-six samples (0.3%) were deemed harmful to health. These samples contained foodborne pathogens (Listeria monocytogenes, Salmonella, verotoxin-producing Escherichia coli (VTEC), noroviruses) or foodborne intoxication pathogens (Clostridium perfringens, Staphylococcus aureus, Bacillus cereus) whose harmful toxins or microbially caused toxic protein degradation products (histamine) were detected in ready-to-eat food at a harmful germ count or concentration.
Due to sensory and/or microbiological examination findings, 524 samples (4.0%) were no longer considered suitable for human consumption, 294 samples had misleading presentation or devaluation, and 671 samples had labeling errors. The microbiological investigations revealed significant hygiene deficiencies in 782 samples.
