Microbiological status of pre-cut fruit in the focus of food monitoring

In the National Monitoring Plan (BÜp) in 2016, 745 samples of pre-packaged sliced fruit (fruit mixes and exotic fruits) were tested for various microorganisms.

In numerous cases, guideline and warning values were exceeded. Molds were most frequently detected—135 out of 737 samples (18%) contained levels above the DGHM guideline (recommendations of the German Society for Hygiene and Microbiology). In 81 (11%) and 31 (4.3%) of the 713 samples examined for this, the guideline and warning values for Enterobacteriaceae were exceeded. This is a possible indication that the principles of good hygiene practice were not adhered to. The number of yeasts exceeded the DGHM guideline in 65 (9%) of 738 evaluable samples. Escherichia coli was detected in 5 of 745 samples, 2 of which exceeded the DGHM guideline. In 2 of 700 samples, the guideline values for coagulase-positive staphylococci were exceeded. Salmonella were not detected in any of the 632 evaluated fruit samples.
