New status on the guidelines "Meat and meat products"
In early August, an updated status report from the German Food Code Commission was published, informing about the developments regarding the amendment of the guidelines for meat and meat products.
The most important innovations concern:
- Specification of the "meat" term in the guidelines for meat and meat products
- Detailed description of poultry meat cooked cured products
- Identification "ham - assembled from ham parts"
- Perception of "shashlik"
These recommendations will be forwarded to the involved parties for comments in the next step. Subsequently, the expert committee is expected to further discuss these topics in 2019.
