For operators of beer dispensing systems, there is an updated standard for assessing the microbiological condition of their systems (DIN 6650-6:2014-12).
The new standard now includes microbiological recommendations for filtered beer for the first time. In the previous version, only values for beverages in general were described. The investigation spectrum includes the total germ count and the number of beer-spoiling germs (sample taken from the uncleaned tap). Values below 1,000 CFU/ml beer are considered unobjectionable. If the value exceeds 10,000 CFU/ml, cleaning is strongly recommended.
There are no limit values for beer dispensing systems for official monitoring. Here, values of over 10,000 CFU/ml are still considered notable and values above 100,000 CFU/ml are regarded as hygienically unacceptable. If there are also sensory abnormalities, the sample is assessed as "spoiled." This procedure is at least consensual among the authorities in Baden-Württemberg. (Source: www.ua-bw.de)
