Nutritional information on scalded sausage and scalded frankfurters

Since December 13, 2016, nutrition labeling on pre-packaged food has been mandatory. Regulation (EU) No. 1169/2011 specifies how the nutrition labeling must appear. For example, it is stipulated that the information about energy value, fat, saturated fatty acids, carbohydrates, sugar, protein, and salt must be presented in tabular form and in a fixed order. However, businesses that sell products in small quantities in the local area or offer loose goods at the counter are exempt from these regulations.

In 2017, the CVUA Karlsruhe tested a total of 89 samples of boiled sausage and boiled sausages for compliance with the declared nutritional information. Deviations were mainly found in fat content or saturated fatty acids. It is assumed that the discrepancies are because the labeled values were calculated from insufficient literature data and not based on a food analysis.

Certain deviations from the values specified on the packaging are fundamentally possible, as natural fluctuations and changes can mean values cannot always be adhered to exactly. The EU Commission's guidelines from 2012 dictate how large these deviations may be. Measurement uncertainties of laboratory methods have already been taken into account.
