Salmonella are ubiquitously spread bacteria. They can cause severe salmonellosis, which is why caution is advised for children, pregnant women, the elderly, and immunocompromised individuals. Salmonellosis can cause gastrointestinal problems. However, fever, vomiting, or headaches may also occur. According to the BfR, about 90% of foodborne infections are caused by salmonella.


The main cause of salmonella infections is animal-derived foods. For this reason, they are classified as zoonoses. According to the RKI, livestock such as cattle, pigs, and poultry are most commonly affected. Sufficient heating to 72°C for at least 2 minutes kills salmonella and prevents salmonellosis.
