A few weeks ago, we reported on the European Commission's draft regulation to amend the Additive Regulation with regard to the addition of phosphate in raw, frozen doner kebab skewers. Phosphates are additives that may be added to foods primarily for water retention to a certain extent. This increases the weight of meat, makes it juicier, and binds pieces of meat together.

So far, phosphates were only permitted in heated, but not in raw, frozen doner kebab skewers.

On January 18th, 2018, Regulation (EU) No. 2018/74 was published, which will come into effect on February 7th, 2018. This regulation amends the Additive Regulation with regard to the use of phosphates (E 338 – 452). Phosphates are thus explicitly approved for “frozen vertical meat spits...” intended to be grilled by a food business operator and subsequently consumed by an end consumer.
