Questions-and-Answers-Catalogue on the Guidelines for Vegan and Vegetarian Foods
In March of this year, the German Food Association (then BLL), the Working Group of State and Federal Food Chemical Experts (ALS), and the Working Group of Experts in the Field of Food Hygiene and Food of Animal Origin (ALTS) held a joint workshop to present the new "Guidelines for Vegan and Vegetarian Foods with Similarity to Foods of Animal Origin."
The workshop, attended by 120 participants from industry and food surveillance, has now been documented in writing. The documentation is intended to serve as a basis for understanding and interpreting practical application questions regarding the "Guidelines for Vegan and Vegetarian Foods with Similarities to Foods of Animal Origin."
The question-and-answer catalog can be considered a key component of the workshop materials. It includes, among other things, questions and answers regarding the scope of the guidelines, as well as topics such as the adaptation of substitute products to dairy products, such as cheese and yogurt, or adaptation to designation of origin. Furthermore, it addresses specific terms such as "significantly substitutive ingredient" or "extensive and sufficient similarity."
