Raw foods often entail health risks
The German Federal Institute for Risk Assessment (BfR) warns: Raw animal, but also plant-based foods should be enjoyed with caution — they can contain harmful pathogens such as Salmonella, Listeria, and Campylobacter, and can lead to food infections. Especially young children, people with pre-existing conditions, the elderly, and pregnant women are at risk.
The most important protection against these harmful bacteria is cooking or heating the food:
“The health risks of raw foods are often underestimated,” says BfR President Professor Dr. Dr. Andreas Hensel. “Heating protects. Diseases can already be avoided with simple kitchen hygiene rules. Particularly sensitive groups should only consume animal raw foods sufficiently heated.”
