Real vanilla in ice cream
The guidelines for ice cream from the German Food Code Commission stipulate that ice cream may only be labeled as vanilla ice cream if vanilla pods, vanilla extract, and/or natural vanilla flavor are used for flavoring. If artificially produced vanilla flavor is used instead, the designation "vanilla" may not be used. These products must be labeled with the addition "with vanilla flavor".
For consumers, it is very difficult to distinguish between the taste of real vanilla and artificially produced vanilla flavor. If the products are not labeled accordingly, this constitutes consumer deception. Often, economic and financial interests are behind such deceptions.
At CVUA Sigmaringen, vanilla flavors in ice cream have been investigated since 2016. In 2016, it was found in 4 out of 12 samples that the designation vanilla ice cream was used, although vanillin was used that did not originate from vanilla. Also in 2017, 12 out of 22 samples were labeled as vanilla ice cream, although synthetic vanilla flavor was detectable.
