Recall due to elevated levels of aflatoxins

In September, there was once again a recall due to an increased level of aflatoxins. In the current case, a chestnut flour was affected. 

Aflatoxins, and particularly aflatoxin B1, are toxins (mycotoxins) produced by molds of the genus Aspergillus flavus and Aspergillus parasiticus, which have, among other things, carcinogenic effects. They are very common in nature and can be found in relatively many plant-based foods such as grains, nuts, fruits, and oilseeds. High humidity and warmth promote the growth of these molds, meaning they can proliferate if food or raw materials are not stored properly. Through metabolic breakdown, aflatoxin B1 is converted into aflatoxin M1, which is why it can be found in dairy products and milk. 

Aflatoxins are heat stable, so they are only minimally destroyed by heating processes. For all these reasons, the intake of aflatoxins should be minimized, which is why specific limits are defined in Regulation (EU) No. 2023/915 (contaminants regulation and successor to Regulation (EC) No. 1881/2006)
