Revised information sheet "safely catered" from the German Federal Institute for Risk Assessment - BfR
The BfR has updated its leaflet “Safely Provided - Particularly Sensitive Groups in Community Facilities”.
Previously, a minimum temperature of 65 °C was recommended for keeping food warm. In this year's revision, this temperature was lowered to 60 °C. The maximum time for keeping food warm remains at three hours.
By properly keeping food warm, existing spores can be prevented from germinating, thus maintaining the safety of the food.
