Rye flours contaminated with ergot alkaloids - In BAV Newsletter 02/2014

The Chemical and Veterinary Investigation Office Stuttgart has examined rye flour and rye bread for toxins of the so-called ergot. Ergot refers to a fungal infestation of grain kernels during cultivation. The investigation found partially elevated levels of fungal alkaloids. The Federal Ministry of Food and Agriculture (BMEL) has developed current recommendations for action to minimize ergot in cereals and cereal milling products with associations and companies.
