Salmonella in Chocolate Cream: Recall Draws Attention
A manufacturer of chocolate products recalled certain batches of a hazelnut nougat cream on April 9, 2026. The reason for the recall is the detection of salmonella as part of internal quality controls. Consumers are urgently advised not to consume the affected products.
Health risk from Salmonella
Salmonella are among the most common bacterial causes of gastrointestinal illnesses in Germany, second only to Campylobacter. An infection, known as salmonellosis, usually presents with diarrhea, abdominal pain, fever, nausea, and vomiting. Infants, the elderly, and individuals with weakened immune systems are particularly at risk.
Why chocolate is particularly critical
Although salmonella is relatively rare in chocolate products, it can be especially dangerous in these products. Fat- and sugar-rich products like nut-nougat cream offer effective protection for the bacteria: they can survive stomach acid more easily and reach the intestines in greater numbers, where they can cause infections.
It is noteworthy that even small amounts of bacteria—sometimes less than 1,000—are sufficient to cause illness in such products. By comparison, significantly higher quantities are often necessary in other foods. Furthermore, salmonella can survive in chocolate for years because the combination of low water content and high fat content provides ideal conditions.
Review of previous cases
Outbreaks of illness associated with chocolate are rare but documented in Germany. The last known major case occurred in 2022. In 2025, only one product—a vegan chocolate—was recalled due to salmonella findings, without any reported illnesses.
What consumers should do now
The batches affected by the manufacturer should be disposed of promptly and not further processed. Anyone who notices symptoms of salmonellosis after consumption—especially in children—should seek medical advice.
Authorities also recommend keeping suspicious food for possible examination.
Control and monitoring
The monitoring of food in Germany falls under the jurisdiction of the federal states. The Federal Office of Consumer Protection and Food Safety (BVL) coordinates, among other things, the notifications within the framework of the European rapid alert system. The Robert Koch Institute also provides information on the spread and control of infectious diseases. In our Tentamus laboratories, we regularly conduct tests for salmonella.
