The Codex Alimentarius document „Code of hygienic practice for low-moisture foods“, CAC/RCP 75 has just been revised. It indicates how many samples need to be taken in what quantities to exclude Salmonella. The document makes it clear that product safety can only be achieved through the sum of several measures.
