The Codex Alimentarius document „Code of hygienic practice for low-moisture foods“, CAC/RCP 75 has just been revised. It outlines how many samples in which quantities need to be taken to exclude Salmonella. The document makes it clear that product safety can only be achieved through the sum of several measures.
