Salmonella in Food – Report on the Zoonosis Monitoring 2017
The decline in the Salmonella detection rate in samples of ground pork observed in recent years continued in 2017: With 0.7% positive samples, Salmonella was detected in minced meat samples much less frequently than in previous years (2009: 5% and 2011: 1.3% positive samples).
Pig carcasses were also less frequently contaminated with Salmonella spp., with 2.9% positive samples, compared to previous years' zoonosis monitoring (2011: 4.0% and 2015: 4.5% positive samples). This may be related to improvements in slaughter hygiene, as the introduction of Salmonella into slaughterhouses through Salmonella-positive animals (6.1% positive samples of cecal contents) and thus the risk of meat contamination during slaughter has remained unchanged compared to previous years.
