Salmonellosis, Campylobacteriosis & Co.- What do employees from food businesses need to know about it?
Every year during the summer, the number of foodborne infectious diseases increases in Germany and Europe.
For employees in food businesses and ice cream parlors who work with perishable foods and/or ice cream, it is extremely important to know the dangers and rules if they themselves are affected by such an infectious disease.
Typical symptoms of foodborne infectious diseases such as campylobacteriosis and salmonellosis:
- Abdominal pain
- Nausea
- Vomiting
- Diarrhea
- Gastrointestinal cramps
Possible causes of campylobacteriosis and salmonellosis:
- inadequate heating of food
- insufficient personal hygiene of salmonella shedders
- hygiene errors in production (e.g., contaminated work items, surfaces, and equipment, …)
- cross-contamination between raw and processed foods due to insufficient separation between clean and unclean areas or steps (transmission via contaminated work items, equipment, hands, …)
- use of contaminated raw materials (e.g., eggs, meat, spices, …)
Rules for employees on suspicion of foodborne infectious diseases such as campylobacteriosis and salmonellosis:
- Inform superiors about the infectious disease before starting work (even if suspected)
- In the case of an infectious gastrointestinal disease or suspicion of the disease, do not work with perishable foods
- In these cases, employees are also not allowed to work with objects that come into contact with food
Employees from food businesses and ice cream parlors should be regularly trained on these and other hygiene rules as part of hygiene training and instruction under §43 Section 4 of the Infection Protection Act.
