Stiftung Warentest examines potato chips: Detection of acrylamide and glycoalkaloids

 

In the November 2022 issue of Stiftung Warentest, 25 potato chips and snacks were tested. Among other things, the following examinations were conducted:

Sensory Testing:

The sensory tasting of the samples was crucial for evaluating the most important parameters. Here, the chips are tasted by trained testers for appearance, smell, taste, texture, mouthfeel, and aftertaste. In addition, the chips were checked for dark discolorations. The levels were very low in all products.

Acrylamide:

Acrylamide is formed when frying potatoes. The formation of acrylamide can be minimized by selecting suitable potato varieties and adjusting frying temperatures. Two products exceeded the EU-wide guideline value, which led to a downgrade.

Glycoalkaloids:

Glycoalkaloids such as solanine and chaconine are naturally occurring compounds in potatoes that can lead to poisoning when consumed. As there are no limits set for glycoalkaloids, the findings are assessed based on a toxicological evaluation. The content of glycoalkaloids varies significantly among the tested products. In one product, the glycoalkaloid content is so high that undesirable health effects may not be excluded at about 40 g in children.

Microbiological Examinations:

The products were also tested for the total germ count and salmonella. If necessary, additional testing for spore formers was conducted. Salmonella was not detectable in any product. 

Additionally, the products were tested for mineral oil hydrocarbons, 3-MCPD/glycidol, pesticides, cadmium, and fat quality. Deductions were made for signs of incipient fat spoilage and avoidable contents of mineral oil hydrocarbons, 3-MCPD, and glycidol.
