There is currently no uniform legal definition for food fraud. Generally, food fraud is understood to be the deliberate deception with intent to achieve an economic advantage through the trafficking of food products.

Consumers are deceived in food fraud, among other things, by the use of unauthorized additives that alter the composition of the food product, or by intentional misrepresentation in the form of false or inadequate information on the packaging.

Examples of food fraud include mislabeling of meat types, as was the case in the horsemeat scandal of 2013, substitution of high-quality ingredients with cheap substitutes, or the abusive use of organic or animal welfare logos.

To meet the growing concerns of consumers and customers, the Tentamus Group has established the Tentamus Center for Food Fraud (TCF2).

TCF2 serves as a hub for customer inquiries related to food fraud to be directed to one of the Tentamus laboratories. TCF2 connects the analytical resources of partner laboratories and offers additional services such as sampling and sealing, e.g., of containers at the port before international shipment.

TCF2 utilizes the extensive analytical equipment of the whole group, employing the most modern devices (NMR, LC-HR-MS, LC-MS/MS, NGS, IR-MS, etc.).

The following food groups are particularly vulnerable to food fraud: coffee, tea, edible oils, herbs/spices, tree nuts, honey, fruits, vegetables, fish, and meat.
