Update on the Salmonella Case at the World's Largest Chocolate Factory
Recently, another major salmonella problem in a chocolate factory became known.
The case now appears to be clarified: lecithin was identified as the cause. Lecithins are used in the food industry, among others, as emulsifiers.
Hungary was identified as the origin of the lecithin.
This case shows an exemplary approach to a discovered salmonella contamination:
- Production was shut down
- The authorities and all trading partners were immediately informed
- Extensive cleaning and disinfection measures were decided and implemented
