VTEC/STEC in cookie dough? How dangerous are these microorganisms?
On Monday, Tante Fanny GmbH reported that routine examinations detected a microbiological contamination with Verotoxin-producing Escherichia coli (VTEC).
VTEC are also known as Shiga toxin-producing Escherichia coli. These bacteria can cause severe intestinal infections, which can potentially damage other organs such as the kidneys. In this case, they are referred to as EHEC bacteria (Enterohaemorrhagic Escherichia coli), which can trigger hemolytic-uremic syndrome (HUS). As a result of the finding, Tante Fanny initiated a recall of the product “Fresh Spelt Shortcrust Pastry 400g” to eliminate risks from potentially raw-consumed cookie dough.
Verotoxin-producing Escherichia coli can enter ready-to-eat foods through contamination of raw materials, such as raw plant-based foods, or hygiene errors.
