Assessment of Investigations on Deadly STEC in Flour – Resolution of the Food Chemistry Expert Panel (ALS)

The ALS (Working Group of Food Chemical Experts of the Federal States and the Federal Office of Consumer Protection and Food Safety) has published a new resolution on how to handle findings of Shiga toxin-producing E. coli (STEC).

In it, the ALS concludes that STEC findings are to be classified as harmful to health if the flour does not include information such as „Cereal flours, baking mixes, and doughs are not intended for raw consumption and must always be thoroughly cooked“. The ALS came to this conclusion because it is common for children to consume flour in the form of raw cookie and cake doughs.

This type of labeling for flours is already common in the USA, among other places.
