Particularly cadmium-rich are leafy vegetables such as spinach, Swiss chard, and kale, root vegetables like celery, and mushrooms. Oilseeds such as flaxseed, poppy seeds, or sunflower seeds can also contain a relatively high amount of cadmium depending on the cultivation site. Vegetables and salads from urban gardens are also affected.

Cadmium is a heavy metal naturally found in soils. It is particularly prevalent in sandy and acidic soils. However, due to human activities such as industry, mining, and the use of fertilizers, cadmium levels in our soils and thus in our food are increasingly rising.

Tip: Always wash thoroughly and remove leaves close to the ground since cadmium is particularly found there. The daily consumption of up to 20 g of flaxseed is considered safe as long as not many other cadmium-containing foods are consumed.

Too much cadmium can harm the nerves, cardiovascular system, immune system, and bones. Therefore, it is worthwhile to pay attention to the origin of the food and maintain a balanced diet.
