Ergosterol: A Quality Parameter in Tomato Products
Ergosterol is a component of the cell wall of fungi. It is not present in plant, animal, and bacterial cells. For this reason, Ergosterol can be used as an indicator for contamination of tomato products with molds. Both official food monitoring bodies and food manufacturers use Ergosterol as a hygiene marker.
Currently, there are no legally binding tolerance or limit values for Ergosterol in food at either the national or EU level. Only in the Code of Practice of the European Fruit Juice Association (AIJN) is an acceptable content of 0.76 mg/l specified for tomato juice. Faultless EU-tradable goods should meet this requirement.
