E. coli is a widespread gut inhabitant in humans and animals. In raw foods of animal origin, E. coli is regularly found. But this germ is also regularly detectable in raw plant-based foods, as it is capable of surviving in the environment for a long time. However, the occurrence of these bacteria should be significantly limited by appropriate hygiene measures, as they are an important hygiene indicator on the one hand, and on the other hand, pathogenic E. coli strains exist that can cause severe food poisoning.
The presence of E. coli in food is often assessed as an indicator of potential health risk due to the faecal origin of these germs, as a contamination with pathogens of faecal origin could also be present. In addition, some strains of E. coli can also cause food poisoning; these include, for example, EHEC (enterohaemorrhagic E. coli) or STEC (Shiga toxins). These germs are regularly found in ruminants (cattle, sheep, goats) and can lead to severe life-threatening infections. Besides the gastrointestinal tract, other organs such as the kidneys can also be affected.
