Update of the microbiological guideline and warning values of the DGHM (as of March 2021)
The DGHM Working Group "Microbiological Guidelines and Warning Values for Food" placed two recommendations for the assessment of microbiological results of food back into draft status in March 2021, as they are currently being revised.
The drafts are freely accessible (Link) and can be commented on.
Below is a summary of the latest update from March 2021:
- Freshwater fish (whole fish, cuts, e.g. fillets) for delivery in non-frozen condition (draft): New: For the cuts, there are now specific guidelines for the aerobic mesophilic bacterial count as well as for pseudomonads (5,000,000 cfu/g each, for whole fish 1,000,000 cfu/g each)
- Frozen vegetables (draft): Following changes:
- The guideline for the aerobic mesophilic bacterial count will be increased from 1,000,000 cfu/g to 5,000,000 cfu/g.
- The guideline for Escherichia coli will be reduced from 100 cfu/g to 10 cfu/g and the warning value from 1,000 cfu/g to 100 cfu/g.
- Yeasts are omitted.
