CVUAs Baden-Württemberg: Annual Report Microbiological Examinations 2021

Official microbiological examinations of food in Baden-Württemberg are conducted by the four Chemical and Veterinary Institutes in Freiburg, Karlsruhe, Sigmaringen, and Stuttgart. In addition to scheduled samples, so-called event-driven samples are also examined. Now they draw the balance sheet for the year 2021:

 

11.3% of the scheduled samples and 19.8% of the event-driven samples from a total of 11,000 were objected to last year based on microbiological investigations. This included samples unsuitable for consumption (2.7%) and harmful samples (0.2%). The proportion of the latter has remained largely unchanged compared to previous years.

 

In the samples classified as harmful to health, the following germs were detected in a harmful concentration:

-          Salmonella

-          Listeria monocytogenes

-          verotoxin-producing Escherichia coli (VTEC)

-          Clostridium perfringens

-          Staphylococcus aureus including the harmful toxin staphylococcal enterotoxin

-          Bacillus cereus including the harmful cereulide toxin
